mmmm...monday on tuesday!

So we are a little behind this week and hoping that with Spring comes a renewed sense of timeliness in our blogging. With that said, here is a favorite recipe for Tuesday bc Monday was a wash with the stomach bug. 
We get excited about Spring and Summer cooking around here, one of our favorite dishes is orzo pasta with pretty much anything you want in there. The main recipe is from Giada several years ago and since then I've changed it, added stuff, made it easier, basically messed with it in all kinds of ways. So much so that I have no idea where the real recipe is, so this is my easy version and you know I don't make it unless its easy. 

Delicious Orzo Pasta
1 box of orzo
fresh basil
juice of 1 lemon
1 carton of cherry tomatoes
1 container of feta
2 cans of cannelloni beans 
salt n pepper
Ken's Greek Dressing

Prepare the box of orzo by following the directions on the box. Slice the cherry tomatoes in half, chop the fresh basil, rinse and drain the cannelloni beans, put in a serving dish with the feta. Once the orzo is done, mix all together, squeeze lemon, salt and pepper and Ken's Greek Dressing to taste. I like to mix altogether while the orzo is still warm, it blends better, then let it sit and cool in the fridge. You might need to add more salt and pepper and dressing before you serve. If you want it to be a warm dish then go right ahead and serve or if you'd rather cool the pasta and then mix altogether, thats cool too! 

Thats the great thing about this dish, you can do whatever you want. We've added grilled chicken, we've done argula instead of basil, we've added black olives or gone with chickpeas instead of cannelloni beans, Italian Dressing instead of Greek. You can also make your own homemade dressing or pick another of your favorites. No matter what, it all turns our delicious and thats my kind of recipe... Enjoy! -b
