mmmm monday...

For the longest time I was in search of a Banana Bread that I could make well. I've tried so many different recipes and they never ever turned out the same way or they just weren't the consistency or flavor I was looking for. Have I mentioned that I also like simple (wink wink), so that definitely had to be a part of the equation too. One fun weekend, I tasted this deliciousness and knew I had to have this recipe. We (meaning my hubby too who doesn't even really like banana bread) couldn't stop eating it. We were taking bites at breakfast, at lunch, for snack and dessert. It was perfection. So thanks to a dear friend, I got my hands on that recipe and its still my favorite today. Give it a try...


Barb's Banana Bread
3 over ripe bananas (4 if small)
1 cup sugar
1 egg
1 1/2 c. flour
1/4 c. melted butter
1 tsp baking soda
1/4 tsp salt

Preheat oven to 325 degrees. Mash bananas with a fork. Stir in remaining ingredients. I throw in a bunch of chocolate chips and stir. Pour into buttered loaf pan ( I leave out a bit of melted butter from the mixture and coat the loaf pan with it.) Bake 1 hour. Test with toothpick. If the top is still moist, leave in for a few extra minutes.
