taco tuesday.


i do realize that today is wednesday, but last night, we had taco tuesday. let me tell you, these are not just your run of the mill, homemade tacos. they are so delicious and healthy to boot. here's a way to spice up your next taco tuesday:

{what you need}
2 tbsp mexican seasoning
1 tsp olive oil
1/2 small onion {chopped finely}
2 tsp minced garlic
1 lb uncooked, lean ground beef {93/7- 7% fat}
8 oz canned tomato sauce
8 oz kidney beans {rinsed, drained}
8 taco shells {store-bought, hard or soft}
4 tbsp reduced-fat sour cream
cilantro
jalapenos
shredded mexican cheese {reduced fat}
1/2 cup black olives

{how to}
toast mexican taco seasoning in a medium skillet over medium heat until fragrant-about 20 seconds. add oil to skillet and heat. then add onion and cook until tender. add garlic and cook for about 2 minutes. add beef and brown- 5 minutes. add tomato sauce and beans- stir and cook until heated through, about 5 mins.
fill taco shells with beef/bean mixture. top with 1/2 tbsp sour cream, shredded cheese, cilantro, jalapenos, and black olives. serve with your favorite tortilla chips and salsa or re-fried beans or spanish rice. this beef/bean mixture is great in soft or card taco shells, on top of chips, in quesadillas too.
