we love mexican food...it's a fact. drew and i go on a mexican date night, almost every thursday. it's been our little tradition for awhile now, because most weeks, i am returning home later in the evening from work travels, and am too worn out to cook. plus, like i said earlier, we love mexican food...in any way, shape, or form. charleston had many more options than are available to us now, so i make mexican or south-west inspired recipes at home a lot more. here's one that caught my eye, and that i am hoping to try, very soon. it looks delish (as b would say)!
