mmmm mondays....

well hello! happy monday to you!
this weekend flew by, but it was a great one. i only wish the weather had been better...man was it cold  and rainy. hopefully, the sunshine that greeted us this morning will stick around for awhile. ok, so enough about the weather, let's get to the point of this post. it's monday, and mondays here mean recipes...right?! i hosted a baby shower for my sister-in-law at our home this weekend, and it was so fun. we had a great turnout, really yummy food, and she lucked out in the gift department, man oh man! i fixed one of my go-to dishes for girlie get-togethers. here is the recipe. 

chicken and tortellini salad
{via southern living circa 2010, i think. i am no food photographer, this is as good as it gets}
makes 12-15 appetizer servings
total time: 30 min.
**note, i do not add the chicken...i simply skip that step**

2 {9-oz} packages refrigerated cheese-filled tortellini
1/2 cup olive oil
1/2 cup grated parmesan cheese
1/4 cup fresh lemon juice
2 garlic cloves
1 tsp. worcestershire sauce
2 cups chopped cooked chicken
1 cup frozen sweet peas, thawed
1/2 cup thinly sliced green onions
1/2 cup chopped fresh flat-leaf parsley
salt and pepper to taste

- prepare tortellini according to package directions.
- process olive oil and next 4 ingredients in a blender until smooth.
- toss olive oil mixture with tortellini, chicken, and next 3 ingredients. add salt and pepper to taste.

for the party, i served the pasta in small, clear plastic cups....so simple! -j
