mmmm monday!

Hope yall had a wonderful weekend filled with a little family, friends and hopefully some delicious food that you didn't have to cook...I will just get straight to the point, I don't love cooking. I do it because its my SAHM duty and because its cheaper than going out every night and obviously healthier, but if I had my choice and our 2 boys were amazingly well behaved at all restaurants then we would be ordering in or going out every night. However, I do become rather proud of myself when I discover a new recipe and have success with it. It makes me feel like a rock-star, especially when it gets the approval of the hubby!
Here's one that you just can't mess up...


Taco Soup
1 pound ground beef, 1 onion, chopped, 1 (16 ounce) can chili beans, with liquid, 1 (15 ounce) can kidney beans with liquid, 1 (15 ounce) can whole kernel corn, with liquid, 1 (8 ounce) can tomato sauce, 2 cups water, 2 (14.5 ounce) cans peeled and diced tomatoes, 1 (4 ounce) can diced green chile peppers, 1 (1.25 ounce) package taco seasoning mix

DIRECTIONS: In a medium skillet, cook the ground beef with the onion until browned over medium heat. Drain, and set aside. Place the ground beef, onion, chili beans, kidney beans, corn, tomato sauce, water, diced tomatoes, green chile peppers and taco seasoning mix in a slow cooker. Mix to blend, and cook on a low setting for 8 hours.
Serve with chips, fritos, cheese biscuits or cornbread, cheese, chives, cilantro or sour cream.

The greatest thing about this recipe is you can add or take away anything your heart desires. I add black beans, don't do onions cause the hubby isn't a fan, add in rotel with green chiles instead of the diced chili peppers and we like to add a family favorite-Cholula for that extra little kick! Honestly I've never made it the same way and every time its delish, it can't be messed up and my friends, those are my kinda recipes!
